As part of the campaign I'm running, I need a suitable god / goddess for a character from north-east Allansia. Should be a deity that loathes undeads.

From what I can remember, I don't think any deity loathes undead. I know in D&D a few exist like that but not on titan from what I can remember.
I know Glantanka's preists can smite undead.

Taking inspiration from the Granted Powers seems reasonable.
Glantanka (Sun) and Filash (Fire) grant the ability to Smite undead, indicating an active antipathy towards them. Usrel (Peace) offers Banish and Ward as powers, implying an antipathetic although less proactive attitude to the undead.
Other than that Libra (Justice & Truth), Verlang (Metalworkers), and Fulkra (Travellers) allow their priests to create a Ward, as does Aqualis (Rivers).
Canonically I don't think the gods of Titan have strong cultural/geographical limitations on their worship, so I would just add a Norse flavour to the relevant descriptions (assuming that 'north-east Allansia' means Frostholm).
